In occasione della stagione turistica, la nostra cucina è aperta tutti i giorni sia a pranzo che a cena: e, guidata dal nostro chef Galdino, sforna un nutrito – è il caso di dirlo – menu di specialità rigorosamente fatte in casa e con ingredienti provenienti dalla nostra azienda agricola o da altre nel circondario. Si va dagli gnocchi, alle focacce fatte con le trebbie – il malto che rimane dopo la lavorazione della birra -, allo stinco alla birra, alle costicine alla speciale salsa barbecue di Galdino, fino alle confetture – che si possono trovare anche in vendita.
La filosofia di Galdino è quella di usare sempre la birra nelle sue ricette, ma anche di innovare: ha infatti recentemente portato la tradizione del saor in una materia prima insolita, come la gallina. La carne viene marinata nella Helles Sibilla, unendo poi i classici pinoli e uvetta. Il risultato è un piatto tenero, profumato, e perfettamente equilibrato, adatto a tutte le stagioni; e che suggeriamo in abbinata con la weizen Jam Session.
